Ingredients
3 1/2 cup unsweetened shredded coconut
Pinch of sea salt
1/4 cup goji berries (soaked in juice of 1 orange)
Zest or one orange
1/2 cup raw agave nectar
3 Tbsp coconut milk
Coconut oil
1/4 cup dark chocolate chips
Directions
Place all ingredients except coconut oil in a large bowl. Mix well and add coconut milk until you reach the consistency of wet sand. Press into an oiled pie plate (oiled with the coconut oil). Bake in preheated oven - 375 degrees for 20-25 minutes or until the edges start to become golden brown. Let sit to cool, then transfer to the refrigerator to set completely. It is better to cut it the next day. Cut into triangles and serve.
Variation: If it's not sweet enough for you, glaze the top with strawberry or apricot jam.
