Ingredients
1 cup millet (rinsed well and soaked for 6-8 hours, then drained and rinsed again)
Pinch of sea salt
1 large sweet potato or yam (washed well, cleansed and diced)
3 cups filtered water
1 tsp ground anise seeds
2 T olive oil or coconut oil
Optional spices - cinnamon and curry
Directions
Place all ingredients except the oil in a pot. Bring to a boil on high heat then lower the heat and simmer for 35 minutes.
Serving Options:
1- Add 2 Tbsp coconut oil or olive oil and serve warm
2- Add oil and cinnamon and have it for breakfast
3- Add curry powder and cook it a few more minutes. Add oil, turn heat off and serve.
4- You may also transfer the millet to a ramekin or loaf pan and let it cool completely. Add seasoning of your choice. Slice thinly into rounds or squares and lightly fry with a little oil until the squares become light golden brown.
