Red Quinoa with Black Beans and Zucchini

1 cup red quinoa

2 cups water

1 T. Ghee (clarified butter)

1/2  white onion, chopped

1 clove garlic

2 T. olive oil

1 cup chopped zucchini

1 can organic black beans

Maincoast Kelp flakes and sea salt to taste. 

Bring water, ghee and quinoa to a boil and the simmer for 15 minutes. 

Sautee garlic and onions in olive oil until they become translucent. Add zucchini. Add cooked quinoa to the pan along with seasoning. Mix in can of black beans at the end.

This was ok. I used regular quinoa since I couldn't find red. It was a little bland and I wasn't used to the texture of the quinoa being it was my first time to eat it. I would make it again but add some flax oil next time.

Glad you tried another one. You can make it richer with 2 T toasted sesame oil and a pinch of red chili pepper. Flax oil is also a good idea as well to give it more of a nutty flavor. I've temporarily removed the crumble from the desserts until I can play with the liquids successfully. Thank you for taking the time to comment.
