Marinated Cabbage Salad

4     cups shredded or grated green cabbage
2     cloves garlic, pressed or grated
3     tablespoons raw apple cider vinegar
2     tablespoons extra virgin olive oil or flax oil
1     pinch sea salt
¼    cup dried mint or ½ cup fresh mint, minced

Mix all ingredients in a bowl and let sit for a half-hour in order to marinate.

Variations:

Add 2 tablespoons lemon juice and a few drops of stevia.
Substitute 2 cups green cabbage with red cabbage and add 1 grated carrot and ½ of a small beet (grated).
Substitute mint with basil or dill.
